"Unlike flaxseed, chia seeds can be stored for long periods
without becoming rancid and don't require grinding (whole
flaxseed is tough to digest). Chia provides fiber (about 2
tablespoons--25 g--give you 7 g of fiber) as well as other
important nutrients, including calcium, phosphorus, magnesium,
manganese, copper, niacin, and zinc.
Very few formal studies have looked at chia's benefits, although
I expect that more will soon. In a preliminary study from
the University of Toronto, researchers fed 21 diabetics either
a supplement made from chia or grains with similar fiber content.
After 3 months, blood pressure in patients taking chia dropped
(10 points diastolic, 5 points systolic) while the grain group's
BP remained steady.
I enjoy the seeds' nutlike flavor and consider them to be
a healthful and interesting addition to my diet. You can sprinkle
ground or whole chia seeds on cereal, yogurt, or salads; eat
a handful of whole seeds as a snack; or grind them up and
mix with flour when making muffins or other baked goods.
Or make your own "chia fresca," a drink popular
in Mexico and Central America: Stir 2 teaspoons of the seeds
into 8 to 10 ounces of water (you'll end up with a slightly
gelatinous liquid). Add lime or lemon juice and sugar to taste,
and enjoy.
My prediction? You will begin to see chia being added to more
and more commercial products, such as prepared baby foods,
nutrition bars, and baked goods."

Chia is an oil seed, different from comparable oil plants in its
fat content: two-thirds of Chia oil are Omega-3 essential fatty
acids (polyunsaturated) while only 10% are saturated fatty acids.
Because Omega-3 sources are becoming increasingly scarce in the
world, we need to turn our attention to Chia. In addition to its
extremely high Omega-3 content, Chia has other components that makes
it attractive for human nutrition: antioxidants, fiber, vitamins
B1, B2, B3, plus minerals such as phosphorus, calcium, potassium,
iron, zinc and copper. Chia seed is considered a “dietary
supplement” by the FDA (Food and Drug Administration, USA).
Furthermore, its nutritional content complies with the strict regulations
required by this organization to qualify as a “healthy food”.
Hydrophilic Structural Integrity Of Chia Seed
Chia seed’s unique hydrophilic integrity has the ability
to hold more than 14 times its weight in water. This ensures extended
hydration and electrolyte balance as the seeds hold the water throughout
the digestive processes. Its structural integrity slows digestion,

Seed is one the richest plant based omega-3 sources available (63%).
One of the many functions of omega-3 is its supportive role with
cholesterol. We have been mislead in our understanding of cholesterol.
Cholesterol has been portrayed as being bad. The fact is cholesterol
forms the membranes that enclose every cell in the body. Within
the cells of the skin, cholesterol is changed by the sunlight into
vitamin D which regulates the use of calcium. Cholesterol convert
into bile salts in the liver to digest fats. The emphasis should
not be lowering cholesterol, rather on the “measures”
of cholesterol, dietary among them, supporting its benefits to produce
optimal cholesterol levels. One of the measures you can apply is
to increase the amount of omega-3 EFA you consume. The omega-3 oils
appear to change the balance of cholesterol in the blood: (1) they
lower the “bad” LDL (low density lipoprotein) that carry

high they go rancid and stick to arterial walls causing them to
narrow. (2) they raise the “good” HDL (high density
